Lulu's goodies: Carrot mini cake

No additional sweetener needed. Just the dates. My favourite sugar source ever.

INGREDIENTS:

- 200g grated carrots

- 90g soft dates (soak in hot water for 10-15min)

- 2 cups of ground oats

- 1/2c of ground almonds

- 70g of plant butter(melted)

- 1/2c of oat milk

- 2tsp of baking powder

- 70g chopped walnuts

- 1/2c pumpkin seeds

- 2tsp of cinnamon

- 1/2tsp of cloves

- 1/2tsp of nutmeg


METHOD:

  1. Preheat the oven for 180C

  2. Place the dates along with the water (1/2c) into the pan and cook over the medium heat until you get creamy sticky texture

  3. Mix the date paste with carrot, cinnamon, cloves, nutmeg, chopped walnuts, pumpkin seeds, melted butter

  4. Add the ground oats, almonds, baking powder and milk

  5. Stir everything properly together and place into the small baking form lined with parchment paper

  6. Bake at least for 30-40min depends on the oven

  7. After baking, let it cool down and serve with Love :)

TIP: SERVING THIS DELICIOUS MINI CAKE WITH PEANUT BUTTER AND APPLE IS A GREAT COMBINATION TO ENJOY TOGETHER AT ANY POINT OF THE DAY.
