choco_mini_muffins

Ingredients

- 12 small dried dates

- 1/4 cup of water

- 1/2 cup of peanut butter

- 4 tbsp of organic cocoa powder

- 2 tsp of vanilla essence

- 1 tbsp of grounded flaxseeds

- 1/2 tsp of baking powder

Method

Soak the dates in the hot water for 5-10min. Blend together the dates just with the water first, add the peanut butter, cocoa powder, flaxseeds, baking powder, vanilla essence and blend together. Using the coconut oil in spray, grease the baking tin and scoop the dough into the tin. I have made 6 small muffins.

Baking time: 15min at 180C
